Ladyfingers with Tomato Sauce

Ingredients

  • 500 g okra pods
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 600 g diced tomatoes (canned)
  • Salt
  • Pepper (freshly ground)
  • a pinch cinnamon

Instructions

    Wash and rinse the okra pods.

    Peel and finely chop the onion and garlic. In a pot, heat the olive oil over medium-high heat and sauté until translucent. Add the okra and cook for 1-2 minutes before pouring in the diced tomatoes. Season with salt, pepper, and a pinch of cinnamon. Reduce heat to medium and simmer for 6–8 minutes.

    Taste again, adjust seasoning if needed, and serve arranged in small bowls.
