Ingredients

  • 2 Organic lemons
  • 1 l apple juice
  • 600 g raw cane sugar
  • 25 elderflower buds

Instructions

    Wash the lemons hot, pat dry, and slice into rounds.

    Bring the apple juice, raw cane sugar, and lemon slices to a gentle boil in a pot, then simmer for 2–3 minutes over low heat.

    If needed, clean the elderflowers and place them in a bowl. Pour the still-hot liquid over the flowers, cover, and let steep for 3 days.

    Strain the syrup through a muslin‑lined sieve into sterile bottles.
