Ingredients
- 250 ml milk
- 50 g sugar
- 0.5 packet vanilla sugar
- 2 Eggs
- 4 stale rolls
- 150 g breadcrumbs
- 0.5 tsp ground cinnamon
- 75 g sugar
- 3 eggs
- 75 g sugar
- 250 ml dry white wine
- a pinch of salt

Whisk the milk with sugar, vanilla sugar and eggs; soak the rolls in the mixture. Remove the well-soaked rolls, squeeze out excess liquid, shape into dumplings and coat them in breadcrumbs. Fry the dumplings in hot clarified butter until golden brown on all sides, remove with a slotted spoon and drain on kitchen paper.

Immediately toss the dumplings in a mixture of cinnamon and sugar. For the wine foam separate two eggs; beat the yolks with the remaining egg, sugar and wine over a hot but not boiling water bath until frothy. Whisk the egg whites with a pinch of salt to stiff peaks and fold into the slightly cooled wine foam. Spoon the sauce onto plates and serve each plate with one dumpling.
