Ingredients

  • 120 g soft butter
  • 60 g sugar
  • 120 g cream cheese
  • 150 g powdered sugar
  • fresh strawberries (for garnish)
  • 175 g flour
  • 40 g ground almonds
  • 0.5 tsp Baking powder

Instructions

    Preheat the oven to 180°C fan-forced. Line a muffin tin with paper cups.

    Wash, clean and finely chop the strawberries for the cupcakes. Beat the butter with sugar until fluffy. Whisk in eggs, lime juice and zest, then fold in flour, almonds and baking powder. Mix well, stir in 200 g strawberries, fill the cups and bake for about 25 minutes until golden brown. Remove from oven and cool.

    For the frosting puree the remaining strawberries with a hand blender. Beat butter with sugar until creamy, add strawberry puree and cream cheese. Gradually fold in powdered sugar until a piping‑ready consistency is achieved. Pipe onto cupcakes with a star tip and decorate with strawberries.
