Kale Soup with Sausage

The kale soup with sausage from Spoonsparrow is a delicious winter recipe. Chestnuts provide a hearty base for the soup.

Ingredients

  • 800 g kale
  • 2 onions
  • 250 g chestnuts (vacuum packed)
  • 2 tbsp butter
  • 750 ml vegetable broth
  • 200 ml heavy cream
  • 4 sausage links
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Wash, trim and cut the kale into strips.

    Peel and finely chop the onions. Cut the chestnuts into small pieces.

  3. 3.

    Add butter to a hot pot and sauté the onions. Add chestnuts and kale briefly, then pour in broth and simmer covered for 15–20 minutes.

    Remove some kale and set aside. Stir in cream, blend everything until smooth, then return the kale.

    Slice the sausages and warm them in the soup for 4–5 minutes. Season with salt, pepper and nutmeg before serving.
