Atlantic Cod with Spinach
Atlantic cod with spinach is a delicious recipe for your next dinner from Spoonsparrow!
Ingredients
- 200 g Alaska Atlantic cod fillets (4 pieces)
- 3 tbsp Olive oil (30 ml)
- 3 shallots
- 2 Spring Onions
- 1 can peeled tomatoes
- 3 tbsp chopped herbs (e.g. dill, parsley and chives)
- Salt
- Pepper
- 1 tbsp honey
- 2 tbsp breadcrumbs
- 400 g fresh spinach leaves
- 3 Garlic cloves
Instructions

Preheat the oven to 200°C (180°C fan; gas: level 3).

Wash and pat dry the fish fillets. Place a large piece of foil on a baking tray, brush with 1 tbsp oil and lay the fillets on top.

Peel and finely dice the shallots. Wash and trim the spring onions, then slice into thin rings. Heat 1 tbsp oil in a saucepan and sauté the shallots for 3–4 minutes over medium heat.

Add the spring onions and tomatoes, and simmer for 6–8 minutes until reduced. Rinse the herbs, shake dry, finely chop and add. Season with salt, pepper and honey.

Brush the fish fillets with the tomato sauce and sprinkle breadcrumbs on top. Bake in the preheated oven for about 15 minutes.

Meanwhile, wash and rinse the spinach, then drop it into boiling salted water until wilted, drain and set aside. Warm any remaining oil, sauté the garlic over medium heat for 2 minutes. Add the spinach and sauté for another 2 minutes. Plate the cod with spinach.
