Kale Soup with Kale

Kale soup with kale: Kale tastes good even without sausage and is less heavy as a soup with potatoes and sausage.

Ingredients

  • 350 g fresh kale
  • Salt
  • 500 g waxy potatoes
  • 2 onions
  • 2 cloves garlic
  • 125 g chorizo
  • 1 tbsp Olive Oil
  • 2 tbsp paprika powder (preferably smoked Spanish)
  • 750 ml classic vegetable broth
  • Pepper

Instructions

    Wash and clean the kale several times, removing thick leaf ribs if necessary. Cut the kale into fine strips.

    Add the kale to boiling salted water and cook for 5 minutes, remove, chill in cold water and drain well.

    Wash, peel and roughly dice the potatoes. Place them in some cold water until use.

    Peel and finely chop the onions and garlic. Cut the chorizo into small cubes.

    Add the onions and garlic to the pot and sauté for 3 minutes until translucent. Add the potato cubes and sprinkle with paprika powder. Pour in the broth and bring to a boil. Cook over medium heat for 15 minutes.

    Heat olive oil in a pot. Fry the chorizo in it for 3 minutes. Remove with a slotted spoon and set aside.

    Puree the potato soup finely and bring back to a boil.

    Add the kale to the soup and cook for another 15 minutes. Season the soup with salt and pepper. Warm the chorizo briefly in the soup. Serve the soup sprinkled with paprika.
