Ingredients

  • 5 eggs
  • 1 tbsp Lemon Juice
  • 125 g sugar
  • 100 g flour
  • 50 g cornstarch
  • sugar for dusting
  • 200 g jam (e.g., strawberry)

Instructions

    Preheat the oven to 200°C with top and bottom heat.

    Separate the eggs. Beat the egg whites with the lemon juice until stiff peaks form. Gradually add the sugar, continuing to beat until stiff again. Sift together the flour and cornstarch. Fold the yolks into the meringue, then fold in the dry mixture, gently folding everything together. Spread the airy batter onto a baking sheet lined with parchment paper, smoothing it out, and bake on the middle rack for 10-12 minutes.

    Dust a large kitchen towel with sugar, carefully transfer the sponge onto it, brush the parchment with cold water, and gently lift the sheet off the base of the cake. Using the kitchen towel, roll the sponge immediately and allow it to cool.

    Once cooled, carefully unroll the sponge again, spread jam over it, re-roll, slice into rounds, and serve.
