Ingredients

  • 5 eggs
  • 125 g sugar
  • 100 g flour
  • 25 g starch
  • 1 tsp lemon juice
  • 1 pinch baking powder
  • sugar (for dusting)
  • 100 g jam of choice (e.g., raspberry, strawberry)
  • powdered sugar (for dusting)

Instructions

    Beat egg whites until stiff peaks form, gradually adding sugar and continuing to beat until glossy, firm meringue. Add lemon juice. Sift flour and baking powder together and fold into the meringue alternately with yolks, adding gradually; do not stir. Spread the batter onto a sheet of parchment paper on a baking tray, smooth it out, and bake in a preheated oven at 200 °C fan for about 8–10 minutes. Remove onto a kitchen towel dusted with sugar, lift off the parchment, and roll the sponge. Cover with the towel and let cool.

    Roll apart again and spread jam over the surface. Re-roll, dust with powdered sugar, cut into slices, and serve.
