Italian Turkey Schnitzel
Italian turkey schnitzel! These turkey schnitzels are packed with flavor: a filling of lean cheese, olive oil and tomatoes.
Ingredients
- 125 g mozzarella (9% fat)
- 2 Tomatoes
- 2 stems basil
- 3 tbsp olive oil
- 800 g turkey schnitzel (about 1.5 cm thick, 4 pieces)
- Salt
- Pepper
- 2 tbsp balsamic cream
Instructions

Drain the mozzarella well and cut into small cubes.

Wash the tomatoes, remove stem ends and seeds, then finely dice the flesh.

Wash the basil, shake off excess water, and slice into strips.

In a small bowl mix the tomatoes, mozzarella and basil with 1 tbsp olive oil, seasoning with salt and pepper.

Using a sharp knife, cut a pocket in each turkey schnitzel.

Fill the pockets with the tomato-mozzarella mixture and secure the openings with small wooden skewers.

Brush the meat with the remaining olive oil and season with salt and pepper.

Place on a grill pan over high heat and cook about 8-10 minutes per side. After grilling, drizzle with balsamic cream.
