Italian-Style Tomato Soup

Try the fruity tomato soup in Italian style from Spoonsparrow or another of our healthy recipes!

Ingredients

  • 400 g tomatoes (5 tomatoes)
  • 0.5 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 1 tsp Oregano
  • 100 ml Vegetable broth
  • 1 tsp tomato paste
  • 1 bay leaf
  • Salt
  • Pepper
  • 2 stems basil
  • 0.5 tsp balsamic vinegar

Instructions

    Rinse tomatoes with hot water, then shock them in cold water, peel, halve and dice the flesh.

    Peel and finely chop onion and garlic. Heat 1 tbsp oil in a pot. Sauté onions and garlic until translucent. Add oregano. Stir in tomatoes and tomato paste. Pour in vegetable broth and add bay leaf, salt, and pepper. Bring soup to a boil, cover, and simmer for about 5 minutes.

    Wash basil and shake dry. Cut leaves into fine strips.

    Remove the bay leaf, puree the soup with an immersion blender, then season with balsamic vinegar. Sprinkle chopped basil over the top, fold in some of it, drizzle remaining olive oil on the soup, and serve immediately.
