Ingredients

  • 2 aubergines
  • 2 Zucchini
  • 5 ripe tomatoes
  • 4 tbsp chopped tomatoes (canned)
  • 250 g mozzarella
  • Salt
  • pepper (ground)
  • vegetable oil (for frying)
  • olive oil
  • 4 tbsp finely grated parmesan

Instructions

    Clean, wash and slice aubergines lengthwise into thin slices. Place the slices in a bowl and sprinkle with 2 tbsp salt. Fill the bowl with water. Let the aubergine slices soak for 30 minutes.

    Wash zucchini and cut into not-too-thin slices. Wash tomatoes and slice them. Drain mozzarella and cut into thin slices.
