Italian Beef Burgers with Tomato and Mozzarella

Ingredients

  • 4 ripe tomatoes (red and green)
  • 125 g mozzarella
  • 4 Basil stems
  • 8 slices toast bread
  • 600 g ground beef
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • 4 tsp green pesto

Instructions

    Preheat the oven to 250°C with upper and lower heat.

    Wash the tomatoes, remove stem ends, and slice thinly. Drain the mozzarella and slice thinly as well. Wash basil, shake dry, and roughly chop leaves. Place toast bread slices on the oven rack and briefly crisp in the oven.

    Season the ground beef with salt and pepper and form 8 flat patties. In a pan, cook in hot oil for 2-3 minutes on each side. Just before finishing, place a slice of mozzarella on each patty. Spread four bread slices with pesto and layer alternately with burger patties and tomato slices, seasoning tomatoes with a little salt and pepper. Finally sprinkle basil and add the remaining bread slices on top or underneath.
