Italian White Bean Stew
A hearty Italian white bean stew for soup lovers! Perfect as dinner or lunch, great for takeout and sharing.
Ingredients
- 250 g dried white beans
- 1 bay leaf
- 1 sprig sage
- 0.5 tsp Peppercorns
- 1 tbsp Olive Oil
- 6 tomatoes
- 1 Garlic clove
- 1 untreated lemon
- 8 small salsiccia sausages
- Salt
- a pinch of sugar and chili powder

Soak the beans overnight covered with water. Drain the next day and place in a pot with fresh water. Add the bay leaf, sage, peppercorns, and a few drops of oil; bring to a boil. Simmer partially covered for about 1 hour, adding more water if needed.

Blanch the tomatoes, cool, peel, quarter, seed, and dice them. Peel and finely chop the garlic. Wash the lemon hot, dry rub it, zest it, and squeeze some juice. After about 30 minutes, add the tomato mixture with garlic to the beans. Brown the salsiccia in a pan with remaining oil until golden all around, then finish cooking in the sauce for the last ~5 minutes.
