Irish-Style Mashed Potatoes with Vegetables

- 600 g waxy potatoes
- Salt
- 1.5 stalks leeks
- 3 Carrots
- 250 ml lukewarm milk
- 200 g butter
- black pepper (freshly ground)
- nutmeg

Peel, wash, and cook the potatoes in boiling salted water for 25-30 minutes.

Meanwhile, clean the leeks, halve them, rinse under running water, shake dry, and cut into small cubes. Peel the carrots and cut into small cubes as well. Blanch the leeks in boiling salted water for 30 seconds and the carrots for 1-2 minutes. Shock the vegetables in cold water and drain thoroughly.

Drain the cooked potatoes, press them through a potato masher, and mix with milk, 50 g butter, and the vegetables. Season with salt, pepper, and nutmeg. Serve the mash in deep bowls, create a small well in the center, pour melted butter into it, and serve immediately.
