Irish Stew

Ingredients
- 1 kg lamb meat (from the shank)
- 1 kg white cabbage
- 500 g Potatoes
- 1 stalk leeks
- 2 carrots
- 2 onions
- 2 Garlic cloves
- cumin (to taste)
- Salt
- Pepper (freshly ground)
- 1 bunch flat parsley
- 1 bay leaf
- 1 l beef broth

Remove fat from the lamb and cut into roughly 3 cm cubes.

Clean the cabbage, quarter it, remove the core, and slice crosswise into about 1 cm strips. Wash, peel, and slice the potatoes. Wash, clean, and cut the leeks diagonally into slices. Peel and slice the carrots similarly. Peel and finely chop the onions and garlic.

Layer a bed of cabbage in a Dutch oven. Spread some lamb on top, seasoning with onion, garlic, cumin, salt, and pepper. Cover the meat with potatoes, leeks, and carrots. Season the vegetables, then layer another bed of cabbage. Continue layering all ingredients, seasoning each layer. Finish with a layer of vegetables, sprinkle parsley and bay leaf.

Pour in the broth and cover. Bake in a preheated oven at 175°C (325°F) on the lower rack for about 1½ hours. Then remove the lid, discard the parsley and bay leaf, and let the stew simmer uncovered for another 30 minutes. Taste and serve.
