Indian-Style Lentil Stew with Radish

Ingredients
- 150 g yellow mung beans
- 250 g white radish
- 1 tsp turmeric
- 1 Green Chili Pepper
- 1 tbsp ghee
- 2 cloves
- 0.5 tsp cumin seeds
- 1 bay leaf
- 1 tsp freshly grated ginger
- salt to taste
- cayenne pepper to taste

Wash the mung beans in a sieve under running water, then soak them covered with water for 30 minutes and drain. Peel and finely grate the radish. Wash the chili pepper and slice it into thin rings. Cook the mung beans with the grated radish, turmeric, and 500 ml water for about 20 minutes until the beans are tender.

Meanwhile heat the ghee in a large pan, sauté the chili, cloves, cumin seeds, bay leaf, and ginger briefly. Add the cooked lentils, add more water if needed, and simmer for 4–5 minutes. Season with salt and cayenne pepper before serving.
