Ingredients
- 600 g Chicken breast fillet
- 0.5 tsp Coriander seeds
- 0.5 tsp cumin
- 4 tbsp plant oil
- 1 Garlic clove
- 3 cm fresh ginger
- 1 tbsp red curry paste
- 100 g mango chutney
- 1 tbsp lime juice
- Salt

Rinse the chicken breast, pat dry and cut into strips. Crush coriander with cumin in a mortar and mix with 2 tbsp oil; coat the chicken. Cover and refrigerate for about 1 hour to marinate.

Peel and finely chop garlic and ginger. Sauté together in the remaining oil with curry paste for 1-2 minutes. Add chutney and 3–4 tbsp water. Simmer until thickened, about 5 minutes, then season with lime juice and salt.

Season the chicken and cook in a non-stick pan for 3–4 minutes.

Serve with sauce over rice as desired.
