Ingredients

  • 1.25 kg potatoes (firm boiling)
  • 60 g clarified butter
  • 150 g onions
  • 100 g tomatoes (peeled)
  • 100 g bell peppers
  • 1 clove garlic
  • 0.5 tsp cumin
  • 1 tsp Marjoram
  • Salt
  • 1.5 tbsp sweet paprika powder
  • 0.5 tsp hot paprika powder
  • 100 g Sour cream

Instructions

    Peel the potatoes, onions and garlic. Dice the onion and garlic finely. Halve, core and dice the tomatoes. Wash, trim, halve, core the bell peppers, remove white membranes and cut into cubes.

    Sauté diced onions in clarified butter until golden yellow. Add finely chopped garlic, crushed cumin and paprika powder, sauté briefly. Then add marjoram and deglaze with 2 cups water. Bring to a boil.

    Cut peeled potatoes lengthwise into wedges and add them with diced tomatoes and bell peppers to the pot. Pour just enough water to almost cover everything. Season with salt and simmer on low heat for about 30 minutes until tender.

    Before serving stir in sour cream to taste. Garnish with salad and herbs as desired.
