Hummus Sandwich with Lettuce Leaves

Ingredients
- 200 g chickpeas
- 0.5 lemon (freshly squeezed juice)
- 0.5 tsp paprika powder
- 2 Garlic cloves
- 0.5 bunch parsley (a few leaves)
- 3 tbsp olive oil
- Salt
- pepper (ground)
- 60 g sesame seeds
- 2 baguette rolls
- 4 fresh lettuce leaves
- 2 larger tomatoes
- Salt

Instructions

Soak chickpeas in plenty of water overnight, then simmer with soaking water for about 1 hour, remove from heat and let cool.

Drain the chickpeas.

Peel garlic, roughly chop and blend with chickpeas, lemon juice, paprika powder, sesame seeds, salt, pepper, 4 tbsp olive oil and parsley leaves until a paste forms.

Wash tomatoes, quarter them, deseed and cut into small pieces.

Wash lettuce and pat dry.

For assembly cut baguette rolls crosswise and spread hummus on the lower halves. Arrange tomato slices on top, season with salt and pepper, then place lettuce leaves. Cover with upper roll halves, press lightly and optionally slice across into thicker wedges.
