Honey-Baked Tomatoes with Burrata and Pistachios

Ingredients

  • 500 g plum tomatoes
  • 250 g Cherry Tomatoes
  • 1 tbsp liquid honey
  • 2 tbsp balsamic vinegar
  • 1 tbsp Olive Oil
  • Salt
  • 125 g Italian fresh cheese (Burrata; 1 ball)
  • 1 handful mint
  • 40 g pistachios

Instructions

    Wash the tomatoes and cut them in half crosswise. Place them cut-side up in a baking dish.

    Mix honey, balsamic vinegar, olive oil and a pinch of salt together and brush the cut surfaces of the tomatoes with it. Bake in a preheated oven at 200 °C (fan: 180 °C; gas mark 3) for approx. 20 minutes.

    In the meantime, roughly tear the burrata. Wash mint, shake dry, pluck leaves and cut them into strips. Roughly chop pistachios.

    Remove tomatoes from the oven and distribute burrata, mint and pistachios on top.
