Ingredients

  • 2 red peppercorns
  • 6 Garlic cloves
  • 3 limes
  • 2 tbsp floral honey
  • 6 tbsp oil
  • 1800 g small roast chickens (2 small roast chickens)
  • Salt

Instructions

    Halve the peppercorns lengthwise, remove seeds, rinse and finely dice. Peel and chop the garlic. Grate the lime zest and squeeze out the juice. Mix the prepared ingredients with honey and oil.

    Cut each chicken along the back with poultry scissors. Remove the spine and keel. Trim the wing tips at the joint. Place the chicken breast-side up on a work surface and flatten it by pounding with a heavy pot or a plate iron. Rinse the chicken cold and pat dry.

    Skewer each chicken through the wing, breast, and drumsticks. Lay the skewered chickens on a baking sheet and rub them with the marinate. Cover with cling film and refrigerate for 2 hours to marinate.

    Remove excess marinade and set aside. Grill the chickens over high heat first 25 minutes on the skin side at medium heat, then flip and grill another 15 minutes. Continue grilling for an additional 10-15 minutes, turning frequently and brushing with marinade. Finally season with salt.
