Ingredients

  • 500 g chicken breast fillet
  • Salad
  • Pepper (freshly ground)
  • 3 EL oil
  • 2 TL yellow curry paste (Asian store)
  • 125 ml Vegetable broth
  • 400 ml unsweetened coconut milk (canned)
  • 3 EL lemon juice
  • 350 g Basmati whole grain rice
  • 1 Mango
  • 4 EL chopped coriander leaves

Instructions

    Prepare the rice according to package instructions.

    Slice chicken breast fillets and season with salt and pepper.

  3. 3.

    Heat oil in a wok or high pan and sear the meat over medium heat. Stir in curry paste, vegetable broth and coconut milk, bring to a boil and simmer for about 10 minutes. Season with lemon juice, salt and pepper.

    Peel the mango and cut the flesh from the pit lengthwise. Slice the strips into long pieces.

    For serving arrange mango slices decoratively on a plate, add rice and chicken curry, and sprinkle with coriander before serving.
