Homemade Ricotta-Pesto Ravioli

Ingredients

  • 300 g spelt flour type 1050
  • 3 eggs
  • 1 tbsp Olive Oil
  • 1 tsp salt
  • 150 g green pesto
  • 100 g Ricotta
  • 50 g turkey ham

Instructions

    Knead the flour, eggs, oil and salt into a smooth, supple dough. Add more water or flour if needed. Shape the dough into a ball, wrap it and let rest for about 30 minutes.

    Divide the dough into 3–4 portions and knead each again. Roll out on a lightly floured surface or with a pasta machine to about 3 mm thickness. Cut into squares (about 7x7 cm) using a rolled dough grid.

    Place 1 tsp of pesto onto half of the squares.

    Add a little ricotta and a piece of shredded ham on top. Place another dough square over it and press the edges firmly together. Let rest on a floured surface until all ravioli are formed.

    Cook the homemade ravioli in boiling salted water for 3–4 minutes.
