Ingredients
- 80 g mixed herbs (e.g., basil, parsley, chervil)
- 4 eggs
- 2 tbsp olive oil
- 350 g spelt flour (Type 630 + 20 g for handling)
- Salt
- 1 onion
- 2 Garlic cloves
- 35 g butter (2.5 tbsp)
- 50 g Raisins
- 20 g nettle (2 handfuls)
- 50 g Parmesan (30% fat in milk)
- 200 g ricotta
- 40 g whole grain breadcrumbs (2 tbsp)
- spritz lemon juice
- 1 tsp organic lemon zest
- Pepper

Heat butter in a pan. Toss raisins and nettles for 4–5 minutes over low heat until leaves wilt. Season with salt and pepper. Add drained ravioli, toss for 3 minutes, then serve on plates.
