Ingredients
- 2 fresh egg yolks
- a pinch of salt
- 1 tsp medium-sharp mustard
- 200 ml rapeseed oil
- lemon juice (to taste)

Take all ingredients out of the refrigerator and let them stand until they have reached room temperature. Vigorously whisk the egg yolk with salt and mustard using a hand mixer.

First, whisk in a few drops of oil, then slowly add the oil in a thin stream, but only add as much oil as is immediately emulsified by the egg yolk to create a thick, creamy mayonnaise.
