Light Hollandaise

Ingredients
- 30 g Butter
- 0.5 Zitrone
- 3 Eigelbe
- 0.5 TL mittelscharfer Senf
- 80 ml Gemüsefond (canned)
- 150 g Joghurt (3.5% fat) (room temperature)
- Salz
- white pepper
Instructions

Melt the butter in a small saucepan and set aside. Squeeze the lemon.

Fill a wide saucepan halfway with water. Heat the water until it steams, but does not boil.

Separate the eggs (use the egg whites for another recipe). Place the egg yolks with mustard and vegetable broth in a heatproof bowl (pot with a round bottom). Place the bowl on the hot water bath so that the water does not touch it.

Whisk the egg-mustard mixture with a whisk or the beaters of a hand mixer until it becomes creamy and light.

Gradually whisk in the room temperature yogurt, then the liquid butter in a thin stream.

Season with 1-2 tsp of lemon juice, salt and pepper. Briefly whisk the hollandaise again. Pour into a warmed sauce boat and serve immediately.
