Homemade Gnocchi

With this basic recipe from Spoonsparrow you can easily make homemade gnocchi at home!
Ingredients
- 1 kg starchy potatoes
- 250 g spelt flour Type 1050
- 2 Eggs
- 1 pinch salt
- 1 pinch nutmeg
Instructions

Boil the potatoes in salted water for about 25 minutes until tender, then drain.

Peel the hot potatoes. Pass them through a potato ricer and let the mash dry slightly.

Add the flour and eggs. Season with salt and freshly grated nutmeg to taste, then mix into a dough.

Shape the dough into evenly thick ropes, dust with flour, and let rest for at least 15 minutes.

Cut the ropes into about 1 cm thick pieces. Shape small pieces into elongated balls and press the classic gnocchi pattern with a fork.

Cook the gnocchi in boiling salted water until they float to the surface.
