Homemade Fish Sticks with Pea Puree

Ingredients

  • 800 g Atlantic cod fillet
  • 2 tbsp lemon juice
  • Salt
  • Pepper
  • 10 g spelt whole‑grain flour
  • 2 Eggs
  • 80 g whole‑grain breadcrumbs
  • 2 tbsp sugar‑free cornflakes
  • 2 tbsp clarified butter
  • 0.5 tsp lemon zest
  • 1 onion
  • 1 tbsp butter
  • 450 g frozen peas
  • 1 tbsp chopped parsley
  • 50 ml whipping cream
  • a pinch nutmeg

Instructions

    Wash the fish fillets, pat dry and cut into strips about 2×8 cm. Drizzle with lemon juice and let sit for a few minutes.

    Meanwhile place flour, eggs and breadcrumbs on separate plates. Beat the eggs well with a fork. Crumble the cornflakes and mix them into the breadcrumbs.

    Heat clarified butter in a pan. Season the fish pieces with salt and pepper, lightly coat in flour, then dip in egg and finally coat in the breadcrumb mixture. Fry the fish pieces for about 7 minutes until golden brown on all sides.

    In the meantime peel and dice the onion. Melt butter in a pot, sauté the onion cubes, add peas and parsley. Pour in whipping cream and simmer gently until soft. Remove from heat, roughly puree and season with salt, pepper and nutmeg. Sprinkle the fish sticks with lemon zest and serve with the pea puree.
