Ingredients

  • 500 ml milk
  • 100 g dark bitter couverture
  • 3 egg yolks
  • 40 g sugar
  • 1 tbsp Cornstarch

Instructions

    Heat the milk (leaving 4-5 tbsp) with the broken chocolate pieces while stirring. In a bowl whisk the egg yolks with the sugar until frothy, then stir in the cornstarch and remaining milk. While stirring, pour into the hot chocolate milk and return to the pot; let it bubble once and thicken.

    Remove the mixture from heat, beat briefly again, and pour the pudding into tall glasses. Serve warm or chilled as desired.
