The holiday turkey from Spoonsparrow is a special treat for the whole family.

Ingredients

  • 1 onion
  • 2 stalks celery
  • 3 sprigs rosemary
  • 4 sprigs thyme
  • 3 sprigs sage
  • 300 g white bread
  • 20 g butter
  • 250 g sausage meat
  • Salt
  • black pepper (ground)
  • ground allspice
  • 1 turkey (3.5 kg)
  • 3 tbsp clarified butter
  • 300 g small apples
  • bay leaf (for garnish)
  • lingonberries (for garnish)

Instructions

  1. 1.

    Peel the onion, wash and chop the celery. Wash the herbs, shake dry and chop. Dice the white bread and fry in butter. Mix the celery with the onion, sausage meat, herbs and bread cubes. Season with salt, pepper and ground allspice.

    Wash the turkey. Rub inside and outside with salt and pepper and fill it with the bread mixture. Tie with kitchen twine and dress.

    Preheat the oven to 175°C (350°F) fan‑fry setting.

    Heat clarified butter in a large roasting pan on the stove. Brown the turkey all over on high heat, then place the breast side up and slide onto the lower rack of the oven. Pour 300–400 ml hot water into the pan and roast for about 2½ hours, basting occasionally with the drippings. Turn the bird, baste again, and roast another 2 hours.

    Wash the apples, core them and cut into wedges. Add the apples to the side of the pan 20 minutes before the end of cooking.

    Wrap the finished turkey in aluminum foil and let rest briefly. Skim fat from the sauce and season to taste.

    Plate the turkey with the apples on a platter and garnish with bay leaves and lingonberries.
