Hidden Meatballs

Hidden meatballs are always delicious.
Ingredients
- 1 Shallot
- 3 sprigs parsley
- 20 g basil (1 bunch)
- 1 egg
- 400 g ground beef
- 640 g medium tomatoes (8 medium tomatoes)
- 8 tbsp olive oil
- 1 Garlic clove
- 30 g Almonds (2 tbsp)
Instructions

Peel and finely dice the shallot. Wash, dry, and shake off parsley and basil leaves.

Finely chop parsley and half of the basil. Mix with shallot, egg, and ground beef; season with salt and pepper. Wash tomatoes, cut off each top, and hollow them out.

Fill the tomatoes with the mixture, place in a baking dish, and drizzle 1 tbsp olive oil over them. Bake in a preheated oven at 200 °C (180 °C fan‑forced, gas: level 3) for about 15 minutes.

Place the tops back on the tomatoes and bake for an additional 5 minutes.

Meanwhile, peel garlic and chop almonds. Blend with remaining basil and leftover oil into a smooth pesto; season with pepper and salt and spoon over the filled tomatoes.
