Vegan Avocado Burritos

Ingredients

  • 2 flesh tomatoes
  • 0.5 Cucumber
  • 1 pepperoni
  • 1 red onion
  • 0.5 lemon (juice)
  • 2 tbsp freshly chopped coriander leaves
  • 3 Tbsp plant oil
  • salt
  • pepper (ground)
  • 1 Avocado
  • 4 tbsp Soy yogurt
  • 250 g seitan
  • 4 tortilla sheets

Instructions

    Wash the tomatoes, quarter them, remove seeds and dice finely. Peel the cucumber, halve it and scoop out the seeds with a spoon. Dice the cucumber small. Wash the pepperoni, deseed it and chop finely. Peel the onion and cut into thin strips. Mix the tomatoes, cucumber, pepperoni and onion with 2 tbsp lemon juice, coriander leaves and 1 tbsp oil. Season with salt and pepper.

    Halve the avocado, remove pit and skin and roughly mash with yogurt and remaining lemon juice. Season with salt and pepper.

    Slice the seitan thinly. Add remaining oil to a hot pan and brown the seitan on both sides until light brown. Deglaze with 2-3 tbsp water and cook briefly until the liquid evaporates. Season with salt and pepper and remove from pan.
