Flaky Dough with Green Tomatoes

Ingredients
- 21 g yeast (0.5 cube)
- 1 tsp sugar
- 400 g flour
- 6 tbsp Olive oil
- Sea salt
- 4 egg tomatoes
- 2 balls mozzarella (ca. 250 g)
- 2 Handfuls Basil
- 2 tbsp pine nuts
- Pepper
- flour (for working)
- 60 g grated Parmesan

Crush the yeast into a bowl, stir in sugar and 175 ml lukewarm water until smooth. Add flour, 2 tbsp olive oil and 1 tsp salt, knead into a supple dough; adjust flour if needed. Cover and let rise in a warm spot for about 30 minutes.

Preheat the oven with a baking sheet (or two) to 200 °C fan.

Wash the tomatoes, cut off stems, slice. Drain mozzarella and slice. Rinse basil, shake dry, pick leaves, blend with pine nuts and remaining oil. Season with salt and pepper.

On floured work surface knead dough again, divide into four parts, roll each into thin circles. Place on parchment, top with mozzarella leaving a thin edge. Add tomatoes, sprinkle parmesan, drizzle basil oil. Transfer to baking sheet using the parchment.

Bake in hot oven for 15–20 minutes until golden brown. Remove and serve.
