Ingredients
- 16 chicken wings
- 1 untreated lemon
- 1 tbsp honey
- 1 tsp sharp mustard
- 2 tbsp oil
- Salt
- Pepper (freshly ground)
- 800 g mixed tomatoes (green, red, yellow)
- 3 tbsp white balsamic vinegar
- 4 tbsp grape seed oil
- 1 tsp freshly chopped oregano
- Lemon balm (for garnish)

Preheat the oven grill to 200°C.

Wash and pat dry the wings, then cut them into pieces. Grate the lemon zest and squeeze its juice. Mix both with honey, mustard, and oil until smooth; season with salt and pepper. Toss the chicken parts in this mixture and place on a rack (with a pan underneath) in the hot oven for about 25 minutes, turning halfway through.

For the tomato salad, wash, trim, and quarter the tomatoes. Combine with balsamic vinegar, grape seed oil, and oregano; season with salt and pepper. Arrange together on plates and serve garnished with lemon balm.
