Herring Salad with Apple and Oven Potatoes

The herring salad with apple and oven potatoes from Spoonsparrow is a healthy variation of the Scandinavian classic.

Ingredients

  • 1 kg new potatoes
  • 2 tbsp Rapeseed oil
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp thyme leaves
  • 2 Apples
  • 3 matjes herring fillets (300 g)
  • 1 Red Onion
  • 3 tbsp crème fraîche (60 g)
  • 150 g sour cream (10% fat)
  • 1 tbsp honey
  • 2 tbsp Apple cider vinegar
  • Sweet Paprika Powder
  • 2 sprigs dill

Instructions

    Wash potatoes thoroughly and cut in halves or quarters depending on size. Mix with oil, salt, pepper and thyme and place on a baking sheet lined with parchment paper. Bake in preheated oven at 225°C (convection 200°C; gas: level 3–4) for about 45 minutes until golden brown.

    Meanwhile peel, wash and dice apples. Clean herring fillets, pat dry and cut into bite‑sized pieces. Peel onion, halve and slice into thin half‑rings. Whisk crème fraîche with sour cream, honey and apple cider vinegar and season with a little salt and pepper.

    Combine herring with apple cubes in the sauce, arrange on plates and sprinkle with onions and paprika powder. Add oven potatoes and serve garnished with dill.
