- 500 g waxy potatoes
- 8 herring fillets (ready-to-cook, with skin, 80 g each)
- 300 ml whipping cream
- 3 eggs
- 100 g freshly grated cheese (e.g., Gruyère)
- 4 tbsp crème fraîche
- Salt
- black pepper (freshly ground)

- 2 tbsp breadcrumbs

Preheat the oven to 180°C (356°F) with upper and lower heat. Peel, wash, and slice the potatoes thinly or into rounds. Wash the herring fillets, pat dry, and roll them up. Whisk together the cream, eggs, half of the cheese, and crème fraîche; season with salt and pepper.

Lay a layer of potato slices on the bottom of a buttered casserole dish, place the rolled herring on top, pour the egg-cream mixture over it, then sprinkle with the remaining cheese and breadcrumbs. Bake in the preheated oven for 25–30 minutes.
