Smoked Salmon Casserole

Ingredients
- 250 g smoked salmon (wild salmon preferred)
- 200 g crème fraîche
- 50 g whipping cream
- 2 Eggs
- 2 Spring Onions
- 1 lemon (juice)
- Salt
- ground pepper

Puree the salmon finely and mix with whisked eggs, crème fraîche, and cream. Remove most of the green from the spring onions, finely chop the remaining, and stir into the mixture. Season with lemon juice, salt, and pepper. Fill four oven-safe flan molds with the batter.

Place the molds in the baking pan of the oven and pour enough boiling water so that the molds stand about 3 cm in the water. Bake in a preheated oven at 125 °C (fan) for about 30 minutes until set. When ready, pour the casserole from the molds onto a plate and serve warm or at room temperature.
