Ingredients
- 150 g wheat flour type 1050
- 100 g Spelt Whole Grain Flour
- 50 g ground almonds
- 2 tsp Dried thyme
- 1 heaping tsp salt
- 1 pinch sugar
- 1 sprinkled tsp chili powder
- 200 g cold butter
- 1 large egg
- fresh thyme sprig
Instructions

Mix wheat and spelt flours with almonds, salt, sugar, thyme and chili. Cut the butter into small pieces. Knead flour mixture, butter and egg into a shortcrust dough. Wrap in foil and chill for 1 hour.

Roll dough to about 3 mm thickness and cut round cookies (diameter ~3-4 cm). Place a small thyme sprig on each cookie and press slightly. Arrange on parchment-lined tray. Bake at 170°C (fan 150°C) for 15‑20 minutes until golden brown. Cool. Serve as an aperitif.
