Pumpkin with Cottage Cheese

The pumpkin with cottage cheese from Spoonsparrow is a fall seasonal favorite packed with protein-plus!

Ingredients

  • 1 kg butternut squash
  • 1 tbsp Rapeseed Oil
  • Pepper
  • nutmeg
  • a handful of parsley
  • 500 g cottage cheese
  • 1 tsp lemon juice

Instructions

  1. 1.

    Clean, wash, halve, seed the pumpkin, cut into cubes and toss in a bowl with oil, pepper, and a pinch of freshly grated nutmeg.

    Spread the pumpkin on a parchment-lined baking sheet and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 20–25 minutes until tender and lightly browned.

    Meanwhile wash the parsley, shake dry, pluck leaves and roughly chop. Mix cottage cheese with parsley and lemon juice.

    Serve the pumpkin topped with the cottage cheese mixture on plates.
