Colorful Vegetable Stew with Beef

Ingredients
- 750 g beef (stewing beef, boneless)
- 2 shallots
- 2 Garlic cloves
- 1 tsp butter
- 2 carrots
- 2 stalks celery
- 100 g Celery Root
- 2 parsley roots
- 250 g firm boiling potatoes
- 50 g butter
- 3 whole cloves
- 1 bay leaf
- 750 ml beef or veal broth
- 250 ml dry white wine
- 6 peppercorns
- 2 tbsp chives rings
Instructions

Wash the meat. Peel and slice the shallots, finely chop the garlic. Cut the beef into 2–3 cm cubes. Melt butter in a pot, sauté the shallots and garlic. Add the beef, brown briefly. Add cloves, peppercorns, bay leaf, pour in broth and wine, bring to near boil, cover and simmer on low heat for about 1 hour 30 minutes.

Meanwhile peel and slice carrots. Peel and cube potatoes into 2–3 cm pieces. Trim, wash, and slice celery stalks. Peel and slice parsley roots. Dice celery root into 1 cm cubes. Add the vegetables to the pot with the beef and cook together for about 15–20 minutes. Season the colorful vegetable stew with beef, sprinkle chives rings on top, and serve.
