Ingredients
- 2 handfuls of herbs (e.g., lemon balm, chives, arugula)
- 2 tbsp lemon juice
- 500 g soy yogurt
- Salt
- pepper (ground)
Instructions

Rinse the herbs, shake dry and pick off leaves. Set aside a few chive stalks for garnish, chop the rest finely and blend with the remaining herbs, lemon juice, and soy yogurt until smooth. Dilute with about 500 ml cold water to desired consistency and blend until frothy. Season with salt and pepper.

Pour into glasses and serve garnished with chopped chives.
