Herb Chicken Salad

Ingredients

  • 0.5 bunch Basil
  • 0.5 bunch Parsley
  • 0.5 bunch dill
  • 0.5 bunch arugula
  • additional herbs (as desired/seasonal)
  • 1 pink grapefruit
  • 2 tbsp toasted pine nuts
  • 1 large chicken breast fillet
  • Salt
  • Pepper
  • 3 tbsp white balsamic vinegar
  • 2 tbsp garlic oil

Instructions

    Season the chicken breast lightly with salt and pepper, wrap tightly in plastic wrap and then in aluminum foil. Simmer in a pot of boiling water for about 10–15 minutes.

    While the chicken cooks, wash the herbs, shake dry, and bundle into four mixed sprigs. Peel the grapefruit thoroughly with a sharp knife, cut the segments from the membranes, and place on a plate. Squeeze out the remaining juice and mix with vinegar and oil, seasoning lightly with pepper and salt.

    Remove the chicken from the water, drain, unwrap, and slice lengthwise into very thin strips. Arrange the herb bundles together with the chicken slices and grapefruit segments on plates, sprinkle with pine nuts, drizzle dressing, and serve.
