Hefegebäck-Küken

Ingredients
- 500 g flour
- 1 cube yeast
- 6 tbsp water
- 100 g sugar
- 100 g butter
- 3 eggs
- 1 egg yolk (for brushing)
- raisins (for eyes)
- 8 almond kernels

Sift the flour into a bowl, make a well in the center. Dissolve the yeast in lukewarm water with 1 tsp sugar, pour it into the well, sprinkle some flour on top and cover for 15 minutes to rise. Melt the butter, add the remaining sugar and eggs to form a pre-dough, knead everything well and let it rise covered in a warm place for 1 hour. Knead the dough again and divide it into eight parts, shaping each into a ball.

On a floured work surface roll the eight pieces into ropes about 25 cm long (1) and knot the rope once. Place the dough ball in the middle as the head. Press raisins into the dough for eyes, use almonds as beaks (2). Arrange the little birds on a baking sheet lined with parchment paper and let them rest again for 15 minutes. Beat the egg yolk and brush it over the birds. Bake at 180°C for 15 minutes.
