Hearty Vegetable Stew
A robust vegetable stew that is a simple, satisfying meal with celery, carrots, parsnip and lentils.
Ingredients
- 1 onion
- 3 stalks celery
- 3 Carrots
- 1 Parsnip
- 2 tbsp clarified butter
- 250 g beluga lentils
- 600 ml Vegetable Broth
- 1 tsp juniper berries
- 0.5 tsp Peppercorns
- 1 tsp cumin seeds
- 1 bay leaf
- 400 g diced tomatoes (canned)
- Salt
- 2 tbsp Apple cider vinegar
- 4 large pork sausages
- 2 tbsp Rapeseed oil

Peel and finely chop the onion. Clean, wash, peel if necessary, and dice the celery, carrots, and parsnip. Heat clarified butter in a large pot. Add the onion and sauté until translucent over medium heat. Add the vegetables and cook for 2–3 minutes.

Rinse the lentils and add them to the pot. Pour in the broth. Grind juniper berries, peppercorns, and cumin seeds together in a mortar. Add this mixture with the bay leaf to the stew and simmer gently for about 30 minutes.

In the last ~10 minutes add the diced tomatoes, adding more broth if needed. Season the hearty vegetable stew with salt and vinegar.

Brown the sausages in a pan with hot oil on all sides for about 5 minutes. Slice as desired and serve with the hearty vegetable stew.
