Ingredients

  • 250 g pasta (cylindrical shape)
  • 120 g smoked mozzarella (Scamorza)
  • 80 g salami (whole piece)
  • 4 Tbsp mayonnaise
  • 1 tsp Mustard
  • juice of one lemon
  • 1 tbsp horseradish
  • 1 tbsp balsamic vinegar
  • 1 tbsp Vegetable oil
  • 2 bunches arugula
  • Salt
  • Pepper

Instructions

    Cook pasta according to package instructions in plenty of salted water, drain and set aside some cooking liquid.

    Remove the skin from the salami, dice the cheese and sausage, and mix both with the pasta.

    Whisk mayonnaise with mustard, lemon juice, salt, pepper, vinegar, oil, and horseradish; add a splash of pasta water, combine with pasta, and let rest for 30 minutes.

    Wash arugula, dry, roughly chop, and fold in before serving.
