Hazelnut Apple Cake

Ingredients

  • 4 small apples
  • 1 tbsp Lemon Juice
  • 200 g Spelt flour Type 1050
  • 70 g ground hazelnuts
  • 2 tsp Baking powder
  • a pinch salt
  • 125 g softened butter
  • 80 g coconut palm sugar
  • 3 medium eggs
  • 2 tbsp milk (3.5% fat)
  • 30 g hazelnuts
  • 1 tbsp honey

Instructions

    Peel, halve, core the apples and cut fine slits on the outer side. Toss with lemon juice and set aside.

    Mix flour, ground hazelnuts, baking powder, and salt. Beat butter and coconut palm sugar until fluffy with a hand mixer; add eggs one at a time, mixing well. Alternately fold in the dry mixture and milk into the butter mixture, stirring to a smooth batter.

    Pour the batter into a greased springform pan and level the surface. Place apple halves cut side down into the batter. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 45–50 minutes. Remove from oven and let cool.

    While cooling, roughly chop hazelnuts and scatter over the cake, then drizzle with liquid honey.
