Ingredients
- 700 g turkey breast fillet
- 1 onion
- 1 dried chili pepper
- 2 tsp finely grated fresh ginger
- 3 tbsp oil (30 g)
- Salt
- pepper (ground)
- 1 tsp coriander (ground)
- 0.5 tsp turmeric (ground)
- 1 tsp cumin (ground)
- a pinch nutmeg (ground)
- 2 tbsp dark soy sauce
- 1 Handful Parsley (5 g)
- 1 Spring onion

Wash turkey breast, pat dry and cut into large cubes. Peel and dice the onion; chop the dried chili pepper. Brown the meat in a pan with hot oil all around, season with salt and pepper. Add onion, ginger and chili and sauté for about 3 minutes. Stir in coriander, turmeric, cumin and nutmeg, pour in about one cup of water and add soy sauce.

Cover and simmer over low heat for about 45 minutes. Wash the spring onion, pat dry and slice into thin rings. Wash parsley, shake dry and finely chop. Plate the turkey with soy sauce and sprinkle with parsley and green spring onion rings.
