Ingredients

  • 4 tbsp apple jam
  • 4 tbsp Lemon juice
  • 1 pinch cayenne pepper
  • 1.5 kg pickled ham roast (with rind)
  • 1 Tbsp clarified butter
  • 5 g cloves (for studding)

Instructions

    Warm the apple jam, stir in lemon juice and cayenne pepper to make a glaze. Rinse the ham roast under cold water, pat dry, and cut crosshatch patterns into the rind. Heat clarified butter in a roasting pan and brown the meat all around.

    Remove the roast, let it cool slightly, and stud the crosshatch corners with cloves. Return the roast to the pan, pour in 200 ml water. Brush the roast with some glaze and bake in a preheated oven at 175°C for 90 minutes, brushing with glaze repeatedly.
