Ham Cheese Pizza

Ingredients
- 10 g fresh yeast
- 300 g flour
- 100 g semolina
- 1 tsp salt
- 2 tbsp olive oil
- flour (for working)
- 4 tomatoes (e.g., yellow)
- 180 g cherry tomatoes
- 200 g goat cheese roll
- 100 g Arugula
- 4 tbsp green pesto
- 180 g prosciutto (thin slices)
- Salt
- pepper (ground)
- 2 tbsp olive oil

For the dough, crumble the yeast and dissolve it in 50 ml lukewarm water. Mix flour with semolina and salt, create a well, add the yeast, and dust with flour. Cover and let rise in a warm place for about 15 minutes. Then add the olive oil and about 100-130 ml lukewarm water and knead into a smooth dough. Shape into a ball, cover, and let rise for about 1 hour.

Preheat the oven to 220 °C fan and insert two baking trays.

After the rest period, knead the dough again vigorously, adding more flour if needed. Divide the dough into four parts and roll out thin pizzas on a well-floured surface. Transfer the pizzas onto the hot trays and bake in the oven for 12-15 minutes until crisp.

For the topping, wash the tomatoes and slice them or halve the cherry tomatoes. Slice the goat cheese. Wash the arugula and shake dry. Remove the pizzas from the oven, spread 1-2 tbsp of green pesto thinly on each, and top with prosciutto, tomatoes, cheese, and arugula. Sprinkle with salt and pepper before serving and drizzle with olive oil.
